I’m normally a very sore loser, but since my odds were so nonexistent for this, I just tried to enjoy the process of invention and testing on my coworkers. You’d have a much better chance, of course!

Yes, I also thought hazelnuts would be lovely, but considerably fussier and probably even harder to find. Pistachios at least have the dual virtues of being easy to find and easy to shell.

That’s quite a compliment! I’d think oat bran would probably work, or wheat germ. You want something to add a bit of texture.

Why do I always want to make every recipe you post? I lack a food processor, so tomorrow the hunt begins for oat flour, because I love the idea of oats in digestive biscuits. But I have oat bran, maybe that would work? or I could try another flour, like spelt, which I’ve been dying to experiment with…

Sounds fabulous. I’m allergic to walnuts, so I like the pecan option (which I admittedly would have done anyway), but am also toying with a hazelnut variation, since I actually do have hazelnut oil. (And a precious little box of cranberries in the freezer, just waiting for the right recipe to come along.)
